Entries for Crock Pot Recipes


I'm so excited about these entries for crock pot recipes from my contest last week. As promised, I wanted to share them with everyone in case you missed any of it. I look forward to trying them, especially Charmaine's Caramel Pie! Yumm-o! Check out ALL the recipes Heather sent, isn't she sweet? All this came about from her Chicken Tortilla Recipe she posted a month ago! Thanks, Heather and Thanks to everyone who played along!

Hobo stew...into the pot put 7 oz roast beef seasoned with s & p, 1 whole white onion, 4 to 6 small potatos, celery, carrots, mushrooms, 1 can of cream of mushroom soup, water, and another other seasonings your family loves (great way to get rid of leftover veggies too)...cook on low for 6 hours. This translates to fix-in-morning, and when you come home from work, dinner is served!I'd love to win one, either or both of these fabulous items...lol

White Bean Chicken Chili
* 2 tablespoons vegetable oil
* 1 pound diced, cooked chicken meat
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 (14.5 ounce) can chicken broth
* 1 (18.75 ounce) can tomatillos, drained and chopped
* 1 (16 ounce) can diced tomatoes
* 1 (7 ounce) can diced green chiles
* 1/2 teaspoon dried oregano
* 1/2 teaspoon ground coriander seed
* 1/4 teaspoon ground cumin
* 1 (15 ounce) can white beans
* 2 ears fresh corn
* salt to taste
* ground black pepper to taste
* 1 lime, sliced
DIRECTIONS
1. Heat oil, and cook onion and garlic until soft.
2. Stir in broth, tomatillos, tomatoes, chilies, and spices. Bring to a boil, then simmer for 10 minutes.
3. Add corn, chicken, and beans; simmer 5 minutes. Season with salt and pepper to taste.
4. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.

Caramel Pie!
1 14oz can fat-free sweetened condensed milk
1 6oz package reduced-fat graham cracker crust
1 8oz container frozen whipped topping, thawed
1 1.4oz milk chocolate-crisp butter toffee candy bar (Heath or Skor), coarsely chopped

1. Pour milk into a 2 cup glass measure; cover with foil. Place in 3-4qt electric slow cooker. Add very hot water to slow cooker to reach level of milk in measure. Cover slow cooker with lid; cook on low-heat setting 9 hours (milk should be the color of caramel).
2. Pour caramelized milk into crust; let cool. Spread whipped topping over pie, and sprinkle with chopped candy bar.

Italian Roast and I came up with this one on my own. :-)
Italian Roast 1- 3-4 lb roast
2-3 cans of stewed tomatoes w/ green pepper & onions or Italian style
3 cans whole potatoes
1 pkt of (dry) Good Seasons Italian Dressing
Place roast in crockpot and add potatoes. Mix tomatoes and seasoning packet. Pour over roast. Cook on low 8-10 hours. Easy peasy and delicious!

Shredded Beef
2 lbs roast
1 package fajita seasoning mix
1 green pepper
1 red pepper
1 yellow pepper
1 onion
1/3 cup water

At bottom of crock pot add veggies. Cut meat into slices 1 inch thick. Add meat to pot. Mix fajita seasoning with water pour over meat. Cook on low 8 to 10 hours. Use fork to pull meat apart into shreds. Serve in tacos or on salad.

Well, I'm into making spaghetti sauce in my crockpot...1 lb of hamburger1 lb of Italian sausage (you can use two lbs of either, to your liking)1 12 oz can of tomato paste2 18 oz cans of diced tomatoes1 28 oz can of tomato sauce1 onion, choppeda few garlic cloves, choppedvarious dried and fresh spices like oregano, thyme, rosemary...brown the meat with the diced onions and garlic. Put all into a crock pot.. If using dried spices, put them in at the beginning with the sauce, if using fresh, they are better put in towards the end. Cook over low heat for 8 to 10 hours..

Beef Stew
2.5 pounds stew meat, or steak cut into 1" cubes
¼ - 1/3 cup flour, seasoned with s&p
1/3 cup canola or corn oil
1 large onion, chopped
1 large garlic clove, minced
4 cubes beef OXO
3 cups boiling water
5 potatoes, cubed
2 pounds carrots, chopped

Toss meat cubes in flour, a few at a time. Set aside.Pour hot water over OXO cubes and let them dissolve – set aside, but keep stirring it on occasion.To large stockpot, add oil and heat until hot but not smoking. Add meat cubes and brown LIGHTLY. Remove from pot. Now, in the remaining oil (if there is none, add about 3 tablespoons), saute onion and garlic about 3 minutes, until onions are clear. Add remaining flour and mix well. Stir in OXO mixture slowly, while whisking, until it is all in and thickening. Add meat back into stockpot. Turn heat to low - simmer 2 hours, stirring occasionally.Turn heat to medium, and add 5 cubed potatoes and 2 pounds of chopped carrots. I love to add mushrooms, especially fresh chantrelles when they are in season! Bring to a boil, reduce heat and simmer 30 – 45 minutes (depends on how big your cubed potatoes are). I’d share the dumpling recipe I use, but I’m at work and don’t have it….but I’ll tell ya, there’s NOTHING better than fresh dumplings on stew!

Kristine Breach Well, I for one just LOVE your cute and useful charms, but can you believe that the only crock pot recipes I have are on the back of the Banquet Crock Pot Classics. I LOVE the chicken and noodles one. :) SO EASY...just thaw the sauce, dump in the bag and cook 8 hrs. and then stir in milk and the dumplings and cook 1/2 hr. on high and it's done! This prolly doesn't qualify me though, huh?? :) {{hugs}} - FUNNY, huh? I put your name in the drawing anyway, Kristine!

Chicken Stuffing Casserole
4-6 chicken breasts
1 small box Stove Top Stuffing for chicken
1 – 10 oz. pkg. frozen chopped broccoli, thawed
1 can broccoli with cheese soup
½ C. chicken broth
Lightly butter crockpot and place chicken in the bottom. Mix together the remaining ingredients and place on top of chicken. Cover and cook on Low for 6-7 hours

Gooey Chicken Burritos
2 large chicken breasts
1 – 12 oz. jar of salsa
1 can cream of chicken soup
1 can diced green chilies
1 small onion
2 T. cooking tapioca
1 ½ C. grated cheese (I use more)
Handful of Spanish olives, sliced (I use black olives)
Flour tortillas
Combine all ingredients, except tortillas in crock pot. Cook on low 8 hours. Spoon mixture onto warmed tortillas and roll.

Pumpkin Stuff
1 – 16 oz. can pumpkin
2 ½ tsp. pumpkin pie spice
2 tsp. vanilla
1 – 15 oz. can evaporated milk
¾ C. sugar
½ C. Bisquick (We just use any dried pancake batter)
2 T. margarine2 eggs
Spray crock pot with cooking spray. Beat ingredients together until smooth with a hand mixer; pour into crock. Cook on Low 6-8 hours or High 3-4 hours. Spoon into cups and top with cool whip or ice cream. Makes 6 servings

Sweet and Spicy Slow Cooked Chicken
6 chicken halves, skinless
1 cup soy sauce
¼ tsp pepper
1 cup chicken broth
1 tsp. garlic powder
2 Tbsp. lemon juice
½ cup brown sugar, packed
Place chicken in slow cooker and sprinkle with pepper. Mix all other ingredients together. Pour over chicken. Cover and cook on Low for 7 to 9 hours, or HIGH for 3 to 4 hours. Remove chicken and shred. Replace chicken. Serve over hot cooked rice.

Cheese Dip
1 can Hormel no beans chilli
1 can diced tomatoes with chilli’s
1 (1 lb) block velveeta cheese
Eat with tortilla chips (Would be best doubled for a large group)

Crock Pot Dip
Start with a large Pyrex bowl that will go in the microwave. Cut a 2 lb. loaf of Velveeta in chunks and put in bowl. Put the bowl in microwave and start melting the cheese. Put in microwave for 1 minute, stir, put back in for another minute, stir and so forth. When cheese is like ½ way melted start adding milk a little bit at a time and stir and melt until it looks like the consistency you want. After it is melted and stirred with the milk to correct consistency add 1 lb of fried, crumbled ground beef. Add 1 jar of mild, or hot whatever you like salsa. You may also add a can of mushrooms if you want. After all of this is mixed together I put it in crock pot to keep it warm on low. It’s one of those recipes you just got to eye ball the right amount of milk, you can always add more but you can’t take it away if it gets runny. Just experiment.

Savory Slow Cooker Chicken (Company Chicken)
4 chicken breasts (Fresh or frozen)
1 can stewed tomatoes (15 oz.) undrained (I use diced)
1 bay leaf¼ teaspoon pepper
2 garlic cloves, minced
1 onion, chopped
½ cup chicken broth
1 tsp. dried thyme
1 ½ teaspoon salt
Combine all ingredients in slow cooker. Cover, cook on low for 8-10 hours. Remove chicken. Thicken juices with cornstarch and water (I can’t remember the amount, I usually just guess). Serve with chicken.

Pulled beef (or pork) sandwiches. I put a 3lb roast in the crock pot on low & pour a bottle of my favorite BBQ sauce on it.. let it cook 6-8 hours. Drain the juices out & shred the meat with 2 forks. Then pour another bottle of BBQ sauce in the crock pot & cook for another hour. I get the huge bottle of sauce at Costco & just use half at a time. serve over crusty rolls... my husband loves this! :D

Best Pot Roast
Put a 3-4 pund boneless chuck roast in crock pot. Add 1 can cream of mushroom soup and 1 package dry french onion soup mix, stir. Turn on low. After 2 hours, add 1 bag baby carrots and lots of red or creamer potatoes(rinsed). Aprroximately 6 hours later, it's done! Serve with ciabbata bread and Becker Vineyards Claret. Pin It
